Scott began his apprenticeship in country NSW at the Ashwood Country Club. After learning the basics he moved to Sydney to fulfil his love and passion for food. Upon completing his apprenticeship he worked in a large bistro/function centre and a five star motel in Kings Cross.

Scott’s first position as a head chef was back in his home town of Dubbo at the Cascades Motor Inn. In 1997 Scott married his best friend, Tammy, and they moved to Bathurst where he started out as a casual chef before working at the Bathurst Goldfields as head chef and assistant manager for nine years.

the beginning

Scott began his own business in the home kitchen producing several different handmade ravioli and dried pasta which he sold at the local farmers markets. He named his business, Al Dente: Fresh, Dried and Specialty Pasta. It was clear that there was a demand for the product and the business needed to grow, hence Al Dente: Gourmet To Go was born.

The doors opened in Keppel Street, Bathurst on 29 August 2005 with two casual staff for that week and stocking a total of 4kg of Bills Beans coffee. Now, nine years on, they have five full time staff, two casual staff and stock 100kg of coffee for the week. Al Dente has won two hospitality awards, 'Bathurst Best Business Award' and have been recognised in the 'Good Food Guide'.

There is no menu at Al Dente. Scott loved the idea that he could make whatever was seasonal and fresh at the time so the deli is filled each day with amazing fresh food ready to eat. It makes the experience different every day and people love it.
